It is essentially sweetened cream set with a little gelatin, which means it is low-carb by nature; the only swap is trading sugar for a keto sweetener. The result is a trembling, spoon-coating custard that feels far more impressive than the effort involved.

Success comes down to two details: bloom the gelatin properly so it dissolves without lumps, and do not let the cream boil, which can dull the flavor. Chill until just set for that signature gentle wobble.

Ingredients

  • 2 1/2 cups heavy whipping cream (net carbs โ†’)
  • 1/2 cup unsweetened almond milk (net carbs โ†’)
  • 1/3 cup powdered erythritol or allulose (net carbs โ†’)
  • 1 tablespoon unflavored gelatin powder
  • 3 tablespoons cold water
  • 1 tablespoon vanilla extract or seeds of 1 vanilla bean (net carbs โ†’)
  • Pinch of salt
  • Fresh berries, for serving (optional)

Instructions

  1. 1Sprinkle the gelatin over the cold water in a small bowl and let it bloom for 5 minutes.
  2. 2In a saucepan, warm the cream, almond milk, sweetener, and salt over medium-low heat until steaming but not boiling.
  3. 3Remove from the heat and whisk in the bloomed gelatin until completely dissolved.
  4. 4Stir in the vanilla, then strain the mixture through a fine sieve for a silky texture.
  5. 5Divide among six ramekins or glasses and cool to room temperature.
  6. 6Cover and refrigerate for at least 4 hours, or until set with a gentle wobble.
  7. 7Serve chilled in the glasses, or dip the ramekins briefly in warm water and invert onto plates, topping with berries.

How do I unmold panna cotta cleanly?

Dip the ramekin in a bowl of warm water for about 10 seconds, run a thin knife around the edge, then invert onto a plate and give it a firm shake. Chilling it fully first makes the release much easier.
