A nut-free muffin that stays tender

Coconut flour behaves nothing like wheat or almond flour. It drinks up liquid, so these muffins need a high ratio of eggs to flour, and the batter looks alarmingly thin before it sets. That is normal. As the muffins bake, the coconut flour swells and the eggs firm everything into a soft, cakey crumb.

Because there is no gluten, do not overmix once the wet and dry meet. Stir just until smooth, then let the batter rest for a couple of minutes so the flour hydrates evenly. That short rest is the difference between a fluffy muffin and a damp one.

  2. 2Whisk the coconut flour, erythritol, baking powder, and salt in a large bowl, breaking up any lumps.
  3. 3In another bowl, beat the eggs with the melted butter, almond milk, and vanilla until smooth.
  4. 4Pour the wet mixture into the dry and whisk until no lumps remain, then let the batter rest for 3 minutes to thicken.
  5. 5Divide the batter evenly among the 12 liners, filling each about three quarters full.
  6. 6Bake for 20 to 24 minutes until the tops spring back and a skewer comes out clean, then cool in the tin for 10 minutes.

Why are my coconut flour muffins dry?

Coconut flour varies a lot between brands in how much liquid it soaks up, and too little liquid or too much flour leaves them dry. Measure the flour by spooning it into the cup, and add a splash more almond milk if the batter looks stiff.

Can I add blueberries or chocolate chips?

Yes. Fold in about half a cup of fresh blueberries or sugar-free chocolate chips at the end. Both add a small amount of carbs, so account for that if you are tracking closely.
