Why almond flour needs help to hold together

Almond flour has no gluten, so a loaf made from it alone tends to crumble the moment a knife touches it. The fix is psyllium husk powder, which absorbs water and forms a stretchy gel that mimics part of what gluten does. That gel is what lets this bread hold a sandwich instead of falling apart on the plate.

Recipe FAQ

Why did my loaf turn purple inside?

Some brands of psyllium husk react during baking and tint the crumb purple or gray. It is harmless and does not affect the taste. If it bothers you, try a different brand, since the color reaction varies by supplier.

Can I use coconut flour instead of almond flour?

Not as a one to one swap. Coconut flour absorbs far more liquid, so the recipe would need fewer cups and more eggs. Use a recipe built for coconut flour rather than substituting here.
