The Denver omelette earned its place on breakfast menus for good reason: ham, peppers, onion, and cheese folded into fluffy eggs is a combination that just works. The good news for low-carb eaters is that it is already almost keto by default.

The only carbs worth watching are in the onion and bell pepper, and a modest amount of each keeps this comfortably single-digit. Sauteing the vegetables first drives off moisture so the omelette does not turn soggy.

  1. 1Whisk the eggs with the heavy cream, salt, and pepper until smooth and set aside.
  2. 2Melt 1 tablespoon of butter in a nonstick skillet over medium heat and saute the bell pepper and onion for 3 to 4 minutes until softened.
  3. 3Add the ham and cook another 2 minutes until warmed through and lightly browned. Transfer the filling to a plate.
  4. 4Wipe the pan, melt the remaining butter over medium-low heat, and pour in half the egg mixture.
  5. 5As the edges set, gently push them toward the center and tilt the pan so raw egg flows underneath.
  6. 6When the top is nearly set, scatter half the filling and half the cheddar over one side, then fold the omelette over.
  7. 7Slide onto a plate and repeat with the remaining eggs, filling, and cheese. Serve hot.

Is the onion too high in carbs for keto?

A quarter cup of onion split between two servings adds only about a gram of net carbs each. Used in this small amount for flavor, it fits easily within a keto breakfast.

Can I make one large omelette instead of two?

You can, but folding a six-egg omelette cleanly is tricky. If you have a large pan, cook it all at once and serve it open-faced or as a fold-over that you cut in half.
