Bacon Keto Jalapeno Poppers
Fresh jalapeno halves stuffed with a cheddar cream cheese filling, wrapped in bacon, and baked until crisp. About 1g net carbs each and party-ready.
The appetizer that is already keto
Jalapeno poppers barely need adapting for a low-carb table. Skip the breadcrumb coating that some versions use and the whole thing is just peppers, cheese, and bacon. That coating is the only real source of carbs, so leaving it off keeps these firmly in snack territory.
Removing the seeds and white membranes tames most of the heat, so even people who dislike spicy food can eat a couple. Bake them on a rack set over a sheet pan so the bacon fat drips away and the strips crisp on all sides instead of sitting in grease.
Serve them hot from the oven, when the cheese is molten and the bacon has just gone crisp.

Recipe FAQ
How do I keep the poppers from getting soggy?
Bake them on a wire rack so the rendered bacon fat drains away instead of pooling under the peppers. If you bake them flat on the pan, the bottoms sit in grease and never crisp.
Can I make them milder or hotter?
For milder poppers, remove every seed and all the pale membrane, which hold most of the heat. For more kick, leave some membrane in place, or add a pinch of cayenne to the cheese filling.
