Comfort food, cauliflower on top

Shepherd's pie is the definition of cozy: a rich, saucy meat base under a fluffy mashed topping. The potatoes are the only thing standing between it and keto, and creamy cauliflower mash steps in seamlessly.

Whipped smooth with butter and cheese, the cauliflower topping browns beautifully in the oven and no one will miss the spuds. It is a make-ahead friendly dish perfect for cooler evenings.

Recipe FAQ

How do I keep the cauliflower mash from being watery?

The key is drying the cauliflower well after steaming. Press it in a clean towel to squeeze out moisture before mashing, and avoid adding too much cream.

Can I make it ahead?

Yes. Assemble the whole dish, cover, and refrigerate for up to two days before baking. Add a few extra minutes in the oven if baking straight from cold.
