A proper caesar dressing is already close to keto once you drop the crouton habit. The savory depth comes from anchovies, garlic, parmesan, and lemon, none of which bring meaningful carbs. Bottled versions cut the anchovy and add sugar and fillers, which is why they taste flat by comparison.

Do not skip the anchovies. They melt into the dressing and give it that unmistakable umami without tasting fishy. Blend or whisk everything until smooth, then let it rest so the garlic mellows. Spoon it over romaine, grilled chicken, or roasted vegetables for a fast, rich side.
