Mini bell peppers are naturally sweet and low in carbs, which makes them a solid base for a cheesy snack. Halved and filled with a blend of cream cheese, cheddar, and parmesan, they bake into soft, golden bites that disappear fast off a plate.

Slice each pepper lengthwise and clear out the seeds so the filling sits in a clean cup. Baking softens the peppers while the cheese browns on top, so you get a little contrast in every bite. A pinch of smoked paprika or chopped chives stirred into the filling adds color and flavor without adding carbs.

Can I use regular bell peppers instead of mini ones?

Yes. Cut a full-size bell pepper into wide strips or quarters to make sturdy boats for the filling. They will need a few extra minutes in the oven since the walls are thicker.

Fill the peppers and refrigerate them on the tray up to a day ahead, then bake when you are ready. You may need to add two or three minutes to the bake time if they go into the oven cold.
