- 24 slices pepperoni (net carbs β)
Instructions
- 1Heat the oven to 375F and grease a 12 cup muffin tin well.
- 2Mix the almond flour, 1 cup mozzarella, eggs, baking powder, Italian herbs, and salt into a thick batter.
- 3Divide the batter among the 12 cups, pressing it down to form a base in each.
- 4Add a teaspoon of marinara to each cup, then top with the remaining mozzarella and 2 pepperoni slices.
- 5Bake for 16 to 20 minutes until the cheese is bubbling and the edges are golden.
- 6Cool in the tin for 5 minutes, then run a knife around each bite and lift them out.
